Recipe Big Garlic Mix in a Light Marinade

Today, we present a perfect marinade of 4 types of garlic that can accompany numerous dishes.

Method
First, peel all the garlic and onions.
Leave the garlic whole and cut the onions julienne-style and place in a saucepan.Add a pinch of salt and cover with extra virgin olive oil.
Add the rosemary, parsley and thyme and leave on a low heat until the onion is tender and the garlic is al dente. The ingredients should not change colour.
Then add the vinegar and remove from the heat.
Leave to cool so the flavours can mix. Remove the onion and herbs so you are left with the flavoured oil and garlic.
FINISHING THE DISH:
6. Place the mix in a sealed container and store in the fridge.
CHEF'S TIPS:
- The oil can be used to dress a dish of baked fish.
- Salads can be dressed with this fully flavoured Big Garlic oil.
- If it is kept well sealed in the fridge and you use a utensil to remove the garlic, it can last for some time before it spoils.
- You can use the chopped garlic for a fish, meat or vegetable dish, you can create an appetiser with it or a light purée of garlic mixed with cream, you could flavour a stew... This marinade is incredibly useful.
