Recipe Cherry Tomato and Olive Salad with Garlic and Coriander Dressing
Here is a quick and easy recipe for those who don't want anything too complicated, don't have a lot of time on their hands and fancy something healthy, light and fresh.
Method
Place the olives in a large bowl.
Halve the tomatoes and place them in the bowl with the olives, the extra virgin olive oil and the lime zest.
Chop the garlic and the coriander.
Add these to the bowl and mix well.
Place the contents in a presentation dish adding fleur de sel and drizzle olive oil over the top.
TIPS FROM THE CHEF:
- Use different types of olive.
- Adding balsamic vinegar to the dressing boosts the flavour of the salad.
- Reduce the amount of chopped garlic to a quarter of a finely chopped clove if necessary, because garlic is always stronger raw.
- Always use a good quality extra virgin olive oil. It will make all the difference to the end product.
