This is a delicious, easy-to-prepare tapa or starter. It can be complemented in a huge variety of ways.

  1. Cut the bulb of garlic in half, place in a dish that is suitable for oven use and add some extra virgin olive oil.

     

  2. Place in the oven at 160°C for 8 minutes, or until the garlic is tender.

  3. Leave to cool then remove the skin from the garlic. Place the garlic in a bowl then mash with a fork to create a purée.

     

  4. Add the eggs, beat and mix with a pinch of salt and the flour. Mix until no lumps remain.

     

  5. Add the baking powder, chopped parsley and food colouring to the mixture and whisk until smooth.

     

  6. Cover and leave the mixture to rest and the baking powder to act for 20 minutes.

     

  7. Then heat the deep-fryer and drop spoonfuls of the mixture one by one into the hot oil.

  8. Remove the fritters from the deep-fryer and place on a plate with absorbent paper.

FINISHING THE DISH:
9. Place the fritters on a dish of your choice and decorate with some fresh parsley.

CHEF'S TIPS:
- This recipe can be completed with an ingredient accompanying the garlic, such as cod, spinach, mushrooms... First, sweeten or sauté these ingredients and chop them slightly to then add to the mixture afterwards. For cod, remove the bones and skin.
