This is a really exquisite recipe that combines some marvellous ingredients.

The slices of garlic provide it with a spectacular texture and flavour.

Ingredients

Method

  1. Peel the cloves of garlic and sweeten in water with salt for at least 8 minutes at a medium heat until al dente.

  2. Remove the water, dry the garlic a little with kitchen roll and slice finely.

  3. Place the sliced garlic on greaseproof paper and cover with another piece of greaseproof paper of the same size so the pieces do not dry out and so they keep well until needed.

  4. Cut the ends off the aubergines, remove the skin and dice.

  5. Put a drizzle of extra virgin olive oil in a frying pan and set at a medium-high heat. When the oil is hot, add the aubergines to the frying pan and sauté on both sides until golden and tender. Remove from the heat.

  6. Gently cut the larger mushrooms, leaving the smaller ones whole. In another frying pan with a little oil, set at a medium heat, sauté the mushrooms for a few seconds or until golden.

FINISHING THE DISH:
7. On a large, flat plate, place the hot aubergines in the centre and dress with a little soy sauce and Kimchi sauce.
8. Then carefully place the garlic slices (from step 3) on top, having carefully removed the greaseproof paper from these.
9. Place the sautéed mushrooms around the aubergines and dress individually with meat sauce or stock. Sprinkle carefully with sesame seeds.
10. Scatter the crushed green pistachios on top and around the dish, and finish with a little fleur de sel with lemon.

CHEF'S TIPS:
- The mushrooms can be sautéed with garlic oil or with a finely chopped garlic to enhance their flavour.
- The garlic can be cut with a slicer or a truffle cutter.
- If you have a vacuum packing machine, and if you package the aubergines that have already been dressed with some soy sauce and Kimchi sauce, the flavour of these two sauces become much more powerful in a short space of time. In half an hour, the aubergines will be completely marinated.
