Recipe Banderillas with Black Garlic

A starter that doesn’t need a stove: Banderillas with Black Garlic
You’re sure to like them!
Method
Peel the Black Garlic cloves being careful not to chip them much.
Cut the Gherkins into thick slices of about a finger’s width.
Peel the Carrots, cut them into strips and then into small dice of similar width to that of the Gherkin slices.
Put a dab of Sherry Vinegar, a dab of Oil and a pinch of Salt in a bowl. Add the Gherkins and the Carrots and leave to stand for approximately 20 minutes. When the time is up, rinse.
Remove the Olive’s filling and replace it with a clove of Black Garlic.
DISH PRESENTATION:
Let’s skewer our “Banderillas”. First skewer the Olive filled with Black Garlic, then the folded “Anchovy in Vinegar”, continue with a slice of Gherkin, and a dice of Carrot, and finally, another Black Garlic clove.
Place each Banderilla perpendicularly on a Chili, and …ready!
TIPS FROM THE CHEF_Miguel Ángel Mateos:
- You can replace the Anchovies in Vinegar with Salted Anchovies, adding extra flavour to the Banderilla.
- If you don’t like the vinegary flavour too much, leave the Gherkin and Carrot soaking in vinegar for less time, or dilute the mixture with some water.
