A starter that doesn’t need a stove: Banderillas with Black Garlic

You’re sure to like them!

Ingredients

Method

  1. Peel the Black Garlic cloves being careful not to chip them much.

  2. Cut the Gherkins into thick slices of about a finger’s width.

  3. Peel the Carrots, cut them into strips and then into small dice of similar width to that of the Gherkin slices.

  4. Put a dab of Sherry Vinegar, a dab of Oil and a pinch of Salt in a bowl. Add the Gherkins and the Carrots and leave to stand for approximately 20 minutes. When the time is up, rinse.

  5. Remove the Olive’s filling and replace it with a clove of Black Garlic.

  6. DISH PRESENTATION:

    Let’s skewer our “Banderillas”. First skewer the Olive filled with Black Garlic, then the folded “Anchovy in Vinegar”, continue with a slice of Gherkin, and a dice of Carrot, and finally, another Black Garlic clove.

  7. Place each Banderilla perpendicularly on a Chili, and …ready!

TIPS FROM THE CHEF_Miguel Ángel Mateos:

- You can replace the Anchovies in Vinegar with Salted Anchovies, adding extra flavour to the Banderilla.

- If you don’t like the vinegary flavour too much, leave the Gherkin and Carrot soaking in vinegar for less time, or dilute the mixture with some water.
