This weekend it's Valentine's Day and we thought a nice sponge cake would be the perfect recipe to serve as a dessert for a wonderful lunch or dinner with your other half, friends, family... whoever. :)

Ingredients

Method

  1. Whisk the eggs along with 300 g sugar, the milk and the oil in a bowl, then add the flour and baking powder. Mix well until the mixture is smooth and free of lumps.

  2. Grease a (heart-shaped) mould with a little butter and pour the mixture into it.

  3. Preheat the oven to 180°C and bake for around 20 minutes.

    Remove from the oven and leave to cool.

  4. Meanwhile, finely chop the cloves of garlic and place in a saucepan at a low heat along with 100 g of sugar and 100 ml of water. Cook until the garlic is tender and a colourless syrup is achieved.

    Remove from the heat and set aside.

  5. Melt the couverture chocolate along with the butter.

  6. Remove the sponge from the mould and, using a silicon brush, soak the entire surface with the garlic syrup.

    Soak well to ensure it will be flavoursome, sweet and moist.

  7. Place on an oven rack and, using a spatula, spread the couverture chocolate (from step 5) over the whole surface, removing the excess chocolate from the tray.

  8. FINISHING THE DISH:
    Add the crushed raspberries, scattering over the top of the sponge to give it colour and contrasting flavours.

CHEF'S TIPS:
- This cake can be decorated with white chocolate shavings, fresh strawberries and other fruits.
- Chocolate fans can accompany it with a mug of cinnamon hot chocolate.
- As this is a sweet sponge, and as the cloves of garlic are coated in syrup, the combination is subtle and pleasant, in addition to healthy.
- You can make the sponge more moist if you whisk the egg yokes and sugar, then whisk the egg whites to form stiff peaks, and then mix both mixtures gently, along with the sieved flour.
- When serving, this heart of garlic and chocolate can be served with violet or rose ice cream, or any other flavour of ice cream you fancy.
