Ingredients

Method

  1. Cut the cloves of black garlic into 2 or 3 pieces.

  2. Peel the cloves of both the spring garlic and the black garlic.

     

  3. Clean the Wagyu beef and cut into rectangles.

     

  4. Heat some olive oil in a frying pan at a high heat and cook the meat on both sides.

     

  5. Remove the frying pan from the heat and add some more oil and the chopped cloves of spring garlic. Return the pan to the heat, and set to medium until the garlic turns golden in colour. Set aside.

     

FINISHING THE DISH:

6. Set 3 pieces of meat on a plate per person, dress with a drizzle of oil and put some golden slices of garlic and a little fleur de sel on each piece of meat.

7. The black garlic cloves should be placed between and around the meat, and they should be decorated with sprigs of fresh thyme and the matchstick chips.

CHEF'S TIPS:

  • Wagyu beef is very rich in fat, which absorbs the flavour of the golden garlic, enriching its flavour.
  • The black garlic can be used as indicated in the recipe, or it can be sautéed slightly with some oil, made into a purée or mashed into an aioli with sunflower oil.
  • Grilled or barbecued meat goes really well with a fried garlic sauce, whether the garlic is purple, white or any other Big Garlic variety.
  • This dish can be accompanied by potatoes or grilled vegetables but they are not necessary for this dish to enjoy an intense and delicious flavour.
