Well, here's a delicious marmalade recipe that uses a very mild variety of garlic, the white spring garlic.

So, when you're preparing a cup of tea, a glass of orange juice and your toast, you can give your breakfast a twist with the mild taste of sweet garlic. Every mouthful will fill you with the energy and vitality that this marvellous product brings.

It's also great in winter breakfasts to help build up your defences against those pesky winter colds.

Ingredients

Method

  1. Peel the garlic cloves and place them in the warm olive oil in a pan over a low hear for 15 minutes until the garlic is very soft.

  2. Remove the garlic and drain well. Place in a bowl and crush with a fork until it turns into a purée.

  3. Place the garlic, the sugar, the garlic purée and the water in a saucepan.

    Cook over a low heat for 20 minutes, until it turns syrupy.

  4. Remove the mixture from the heat and add the lime juice, setting the container aside.

  5. FINISHING THE DISH:

    Pour the garlic marmalade into a glass jar so that it keeps better. All that's left to do is to enjoy it with a slice of toast.

TIPS FROM THE CHEF:

- For step 3:

When you have all the ingredients over the heat, avoid stirring continuously otherwise the sugar will harden and crystallize.

- For step 4:

It is important to add the lime juice at the very end, so that the marmalade doesn't crystallize once it cools.

- This is a marmalade that is perfect for breakfast with a slice of toast, or even as an aperitif with crunchy bread and goat's cheese.
