Ingredients

Method

  1. Peel and slice the garlic cloves and the ginger.

  2. Cut the peppers, carrots and courgette into strips of the same width.

  3. Cut the leek into angled wedges.

  4. Cut the tofu into cubes of approximately 2x2cm.

  5. Add the sesame oil to a wok over a medium-high heat and sauté the garlic and ginger, in order to infuse the oil.

  6. Add the leek wedges, followed by the peppers, carrots and courgette. Sauté everything together well.

  7. Then, add the corn cobs, tofu and bean sprouts.

  8. Finally, add the sauces and give the liquid a few seconds to reduce.

  9. FINISHING THE DISH:

    Serve the vegetable, Tofu and Morado Garlic stir-fry in the middle of a dish or a white plate. Arrange the dish in such a way that it acquires volume and looks well presented.

     

  10. Pour a little of the sauce reduction from the wok over the top.

- This is a tasty and healthy recipe, inspired by Asian cuisine and infused with our very own cloves from Big Garlic.
- It is important to sauté the vegetables just to the point of being al dente, so they keep their natural colours. Woks use a technology which allows for cooking vegetables in a very short space of time, maintaining all their nutrients and original flavours.
- It is important to sauté the garlic and ginger first, in order for the oil to soak up the aromas and flavours, which will then infuse the vegetables and tofu.
