So, today we’ll be cooking sautéed fungi with White Garlic.

Method

  1. Peel the Garlic cloves, cut them into slices and then into small dice.

  2. Cut the Cucumbers into thin slices, and cut the Carrots and the Strawberries into small dice.

  3. Pour a dab of Olive Oil in a pan on medium heat, and add the Garlic, the Cucumber, and the Carrot. Sauté the mix until the ingredients become tender.

  4. Wash the Fungi and add them to the vegetables.

  5. Add the Strawberries, sauté for a few minutes, and season.

  6. DISH PRESENTATION:

    Place the sautéed fungi in the centre of a plate and decorate with fresh Parsley. Add a few lemon Spheres on the vegetables a few teaspoons of Double Cream.

TIPS FROM THE CHEF_Miguel Ángel Mateos:

- We can replace the Lemon Spheres with Lemon or Lime zest.

- Double Cream is a type of cream that contains a greater percentage of fat than that of cooking or whipping cream, therefore it will add a great flavour to our dish.

- We can replace the Enoki Mushrooms with seasonal mushrooms.
