Today we are going to encourage us to do a dessert a little more elaborate and very rich, for the greediest of the house.

 

White Garlic, Orange and Chocolate, three very different flavors but which combine to perfection.

Ingredients

Method

  1. Peel and chop the garlic very finely, almost to the point of crushing it to a paste.

  2. Fill a pan about two fingers high with water and place over a medium heat, along with another pan or metal bowl, which allows you to melt the chocolate in a bain-marie. Break up the chocolate and add to the bain-marie, stirring until completely melted through.

  3. Pour the chocolate into dome-shaped silicon moulds, making sure it gets into all the corners.

  4. Place the mould face down in the pan or metal bowl, in order for any excess chocolate to spill over. This way your chocolate dome will have a thin surface. Leave to chill and then carefully remove from the mould.

  5. Grab a new pan and heat up the white garlic, 50g of sugar and the cream over a medium heat, Wait until the sugar dissolves, the garlic softens and the cream begins to thicken, and then remove from the heat.

  6. Pour the mixture into a siphon, then seal and leave to chill. Once cool, give it a good shake as if it was a cocktail shaker, and then keep chilled.

  7. Add the orange juice and remaining 50g of sugar to a pan over a medium heat and leave to cook for about 10 minutes until you achieve a syrup-like consistency.

  8. FINISHING THE DISH:

    Fill the chocolate dome with the garlic mousse, flip it over and arrange in the middle of a flat plate; preferably white so that the dessert really pops on the plate.

  9. Pour the orange sauce over the top of the dome and decorate with edible flowers.

CHEF'S TIPS_Miguel Ángel Mateos:

-Should you not have a siphon at hand to be able to quickly make the garlic mousse, you can resort to simply whipping the cream into stiff peaks along with the sugar and finely chopped garlic cooked in syrup. The final consistency won't be the same, but this nonetheless proves a good alternative to the siphon.
- You can use a number of different sauces other than orange, such as mango, passion fruit or strawberry.
- Feel free to swap up the flavours of the dish with whatever chocolate you prefer, by using white chocolate for the dome for instance.
- You can also add a striking final touch to your dome by using a brush to paint it with a little edible gold dust.
