Hello there!

Here is a very easy salad that is full of flavour and textures.

Ingredients

Method

  1. Clean the beans, topping and tailing them and removing the strings.

  2. Fill a saucepan with water and a pinch of salt and bring to the boil.
    Add the beans and leave them to boil for a few minutes. Test the texture and remove when firm but not soft.

  3. Cool in ice water to stop the cooking process and to set the green colour.

  4. Meanwhile, finely slice 2 cloves of garlic and poach them in warm oil.
    Leave them until they turn soft, then add the cream and a pinch of salt and slowly stir the mixture.

  5. Add half the cheese to the mixture and allow it to thicken, but not stick.
    Turn off the heat and set the saucepan aside.

  6. Chop the bacon into strips and slice the mushrooms finely along with a clove of garlic.
    Sauté over a medium heat, cooking the garlic first and then adding the mushrooms and finally the bacon.

  7. In a deep dish place some spoonfuls of the garlic cheese sauce (from step 5) and carefully place the green beans on top of the sauce.

    Afterwards, add a spoonful of the mushroom, garlic and bacon mixture (step 6).

  8. Finally, grate the black garlic clove over the entire salad, finishing with a pinch of fleur de sel and a dash of extra virgin olive oil.

TIPS FROM THE CHEF:

For step 2:

Add a pinch of bicarbonate of soda to the water when cooking the beans. This will help keep the beans a nice green colour.

For step 5:

The cheese can be swapped for another kind of cured cheese such as Idiazabal or Parmesan.

For step 8:

Add ground almonds to give a crunchy texture to the salad.
