Recipe Garlic Pancakes with Honey and Cream

Method
Finely chop the garlic cloves and sugar coat at a low heat with 50 g sugar and the water. When tender and a white syrup is formed, remove from the heat and set aside.
Put the eggs, milk, butter, remaining sugar, pinch of salt, sieved flour and compressed yeast into a bowl.
With the help of a whisk, mix well until you achieve a homogeneous mixture. It should not be too runny nor too thick.
Add the sweetened garlic syrup to the mix and stir with a spoon. Leave to rest for 30 minutes (do not place in the fridge).
Then place some butter in a frying pan, set at a medium-high heat, and pour in round spoonfuls of the mixture, without letting these circles touch (between 3 and 4 pancakes, depending on the size of the frying pan used).
Leave to cook on one side before flipping with a wooden spatula and cooking on the other side. Remove from the pan. Continue until all the mixture is used.
FINISHING THE DISH:
7. Place 6 pancakes along a flat plate and drizzle generously with honey. Place some whipped cream in the centre and decorate with chocolate shavings.
CHEF'S TIPS:
- This dish can be accompanied with cream cheese, mango purée…
- The honey can be substituted by maple syrup, strawberry syrup or hot melted chocolate, depending on your preferences or what you feel like.
- This is a great way to start the day full of energy and it can also be a wonderful snack.
- Small or large pancakes can be made.
- If you leave the yeast to act correctly, your pancakes will be really tasty.
- The flavour and colour of the pancakes can be changed if you use cocoa powder, coconut or other ingredients, including red fruit jam…
